
These come from the Gironès area of northern Catalonia. In fact we buy them from a farmer in the town of Santa Pau itself, who grows them for us without fumigating them with sulphur or using pesticides of any kind.
This is why, when we get them, we cook them in salted water to keep all their freshly-picked qualities intact.
Santa Pau beans do not absorb the taste of the food with which they are cooked. They are less floury than ‘ganxet’ beans and are perfect for making salads of different kinds, including ‘empedrat’.
