Payés Chick Peas
On our market, there are many varieties of preserves of Spanish chick peas as well as imported ones. One of the tastiest varieties are the so-called "Pedrosillano" chick peas, that, depending on the land where they are grown, achieve an extraordinary quality.
This is the case of the type that we present here. This variety of chick pea is picked from dry farmland with one common denominator: the richness of the soil where they are grown.
This is a chick pea with a really unique taste and a texture that is neither doughy nor floury; it is as tender as any other you can find, rich in fibre and very tasty on the palate. It is very hard work to cook, since it requires a considerable amount of time to reach the perfect point.
Boiled in water with a touch of salt, without any additives or conservatives. Sterilised at 120º C so as to achieve a long period of conservation (5 years).
Suggestions for eating: Every way you can imagine. Simply heated up and sprinkled with virgin olive oil they do not need anything else but a good appetite and some meat or fish to go with them.
