Berenjena Escalivada
We carefully select the eggplants to avoid a hot taste once roasted and prepared. It is an ideal product to serve with roasted meats and goes excellently with the roasted pepper.
We accomplish a uniform cooking because it is done in a broiler oven. They are later hand peeled, cut in slices, introduced in jars and covered up with virgin olive oil; its best preservative.
Suggestion: The eggplant together with the roasted pepper are very good to complete a baked meat. It surprises for its good gastronomic combination with some salted anchovies.
